Instructions

1 cup of carrots to 3 cups of boiling water, add 1/2 teaspoon of salt. Simmer until tender. Yields 4-4 oz servings. Use in soups, stews or any recipe calling for fresh celery, can be rehydrated and used without cooking by covering with water and let stand for 1 hour or until desired texture is achieved.
